2 slices of whole grain bread

1 ripe avocado

1 small lime, juiced

Salt, to taste

1/4 teaspoon crushed red pepper flakes

1/4 cup cherry tomatoes, halved

Fresh cilantro or parsley, for garnish

2 poached eggs (optional)

Instructions

Toast the whole grain bread slices until golden brown.

    While the bread is toasting, cut the ripe avocado in half and remove the pit. Scoop the flesh into a bowl.

      Mash the avocado with a fork, then add the lime juice, salt, and crushed red pepper flakes. Mix until well combined.
