Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1-inch piece of ginger, grated

1 tablespoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon paprika

400g canned tomatoes, pureed

200ml coconut milk or double cream

Salt and pepper, to taste

Fresh cilantro, for garnish

Lemon wedges, for serving

Basmati rice or naan, for serving

Instructions

Marinate the Chicken: In a large bowl, combine the chicken pieces with yogurt, half of the garam masala, and a pinch of salt and pepper. Mix well to coat the chicken. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for deeper flavor.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade, shaking off excess. Add the chicken in batches to avoid overcrowding. Cook until browned and slightly charred on the outside, about 5-7 minutes. Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining vegetable oil, followed by the chopped onion. Sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

        Spice it Up: Stir in the remaining garam masala, ground cumin, ground coriander, turmeric, and paprika. Cook the spices with the onion mixture for about 1 minute to release their flavors.

          Create the Base: Pour in the pureed tomatoes and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes, allowing the sauce to thicken.

            Add Creaminess: Lower the heat and stir in the coconut milk or double cream, mixing well. Return the browned chicken to the skillet, ensuring it is well coated with the sauce. Simmer for another 10-15 minutes until the chicken is cooked through and tender. Adjust seasoning with salt and pepper as desired.

              Serve: Garnish with freshly chopped cilantro and serve hot with basmati rice or warm naan. Don’t forget the lemon wedges on the side for an extra zing!
