Ingredients

For the Chicken Marinade:

500g chicken breast, cut into bite-sized pieces

150g plain yogurt

2 tbsp lemon juice

2 tsp ground cumin

2 tsp ground coriander

1 tsp garam masala

1 tsp chili powder

1 tsp turmeric

1 tsp salt

1 tbsp ginger-garlic paste

For the Sauce:

2 tbsp vegetable oil

1 medium onion, finely chopped

2 tsp ginger-garlic paste

1 green chili, chopped (adjust spice level to taste)

400g canned tomatoes, crushed

1 tsp garam masala

1 tsp ground cumin

1 tsp ground coriander

2 tsp sugar (optional, to balance acidity)

200ml coconut milk or heavy cream

Fresh coriander, for garnish

Salt to taste

Instructions

Marinate the Chicken: In a large bowl, mix yogurt, lemon juice, ground cumin, ground coriander, garam masala, chili powder, turmeric, salt, and ginger-garlic paste. Add chicken pieces and stir until well coated. Cover and marinate for at least 1 hour (ideally 4 hours or overnight in the fridge).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Cook marinated chicken pieces in batches for 4-5 minutes each side or until charred and cooked through. Set aside.

      Prepare the Sauce: In a large saucepan, heat vegetable oil over medium heat. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste and green chili; cook for another minute.

        Add Tomatoes and Spices: Pour in crushed tomatoes. Stir in garam masala, ground cumin, ground coriander, and sugar. Simmer for 10-15 minutes until the sauce thickens.

          Incorporate the Chicken: Add the grilled chicken to the sauce. Pour in coconut milk (or heavy cream) and stir well. Let it simmer for another 5-10 minutes, allowing flavors to mingle. Add salt to taste.

            Garnish and Serve: Remove from heat, garnish with fresh coriander, and serve hot with naan or steamed rice.
