Ingredients

300g mixed seafood (shrimp, scallops, mussels)

1 cup diced potatoes

1/2 cup diced carrots

1/2 cup celery, finely chopped

1/2 cup shallots, minced

3 cloves garlic, minced

2 cups heavy cream

1 cup fish stock

1 tablespoon fresh dill, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup grated Gruyère cheese

1 tablespoon olive oil

Fresh parsley for garnish

1 tablespoon lemon juice

1/4 cup white wine (optional)

Instructions

Preparation of Ingredients: Begin by preparing all your seafood. Clean the shrimp, scallops, and mussels, and set aside. Dice the potatoes, carrots, and celery into small, uniform pieces for even cooking.

    Sautéing the Veggies: In a large skillet, heat the olive oil over medium heat. Add the minced shallots and garlic, cooking until fragrant and translucent (about 3-5 minutes).

      Cooking Vegetables: Add the diced potatoes, carrots, and celery to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

        Combining Ingredients: Pour in the fish stock and white wine (if using). Stir in the heavy cream, smoked paprika, salt, and pepper. Let it simmer on low heat for 10 minutes, allowing the flavors to meld.

          Adding Seafood: Gently fold in the mixed seafood and lemon juice. Cook for an additional 5-7 minutes until the seafood is cooked through and tender.

            Assembly: Preheat your oven to 180°C (350°F). Spoon the seafood mixture into individual cassolette dishes or one large baking dish.

              Finishing Touch: Sprinkle the grated Gruyère cheese evenly over the top of the seafood mixture.

                Baking: Place the cassolette(s) in the preheated oven and bake for 20-25 minutes or until the cheese is bubbling and golden brown on top.

                  Serving: Remove from the oven and let it cool for a minute. Garnish with freshly chopped parsley and serve hot.
