Ingredients

4 ripe peaches, halved and pitted

2 tablespoons olive oil

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Pinch of sea salt

1 pint of high-quality vanilla ice cream

Fresh mint leaves for garnish (optional)

Instructions

Preheat the grill to medium heat.

    In a small bowl, mix together the olive oil, brown sugar, ground cinnamon, vanilla extract, and a pinch of sea salt until combined.

      Brush the cut sides of the peach halves with the olive oil mixture generously.

        Place the peaches cut side down on the grill and cook for about 4-5 minutes until grill marks appear and the peaches become slightly soft.

          Carefully flip the peaches over and grill for an additional 2-3 minutes until warmed through.

            Remove the peaches from the grill and let them cool slightly.

              To serve, scoop a generous portion of vanilla ice cream into the center of each grilled peach half.

                Drizzle any remaining olive oil mixture over the top for extra flavor.

                  Garnish with fresh mint leaves if desired and serve immediately.
