Ingredients

For the Skirt Steak:

1.5 lbs skirt steak

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and freshly cracked pepper to taste

For the Lemon Herb Couscous Salad:

1 cup couscous

1 ¼ cups chicken or vegetable broth

Zest of 1 lemon

Juice of 1 lemon

1 small cucumber, diced

1 cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

Salt and pepper to taste

2 tablespoons olive oil

Instructions

Marinate the Steak: In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, smoked paprika, salt, and pepper. Rub this marinade all over the skirt steak and let it marinate for at least 30 minutes at room temperature or up to overnight in the refrigerator for deeper flavor.

    Prepare the Couscous: In a medium saucepan, bring the chicken or vegetable broth to a boil. Once boiling, stir in the couscous, cover the pot, and remove it from heat. Let it sit for about 5 minutes, then fluff with a fork.

      Mix the Salad: In a large bowl, combine the cooked couscous with lemon zest, lemon juice, diced cucumber, halved cherry tomatoes, red onion, parsley, and mint. Drizzle with olive oil, season with salt and pepper to taste, and gently toss to combine. Set aside to let the flavors meld.
