So, what exactly is sumac? This versatile spice is derived from the dried and ground berries of the sumac plant, which thrives in warm, sunny regions, primarily in the Mediterranean and Middle Eastern areas. It has a unique flavor profile that can be described as tangy and slightly sour, reminiscent of lemon or vinegar, yet with its own distinct character. Sumac's acidity can elevate even the simplest of dishes, adding depth and brightness without overwhelming the palate.

Ingredients

4 boneless, skinless chicken thighs

3 tablespoons sumac

2 tablespoons olive oil

1 tablespoon lemon juice

3 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

In a medium bowl, combine sumac, olive oil, lemon juice, minced garlic, paprika, salt, and pepper. Mix well to create a marinade.

Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to 4 hours for more intense flavor.

Preheat your grill to medium-high heat.

Remove the chicken from the marinade and let any excess marinade drip off.

Place the chicken thighs on the preheated grill. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

Once cooked, remove the chicken from the grill and let it rest for a few minutes.

Slice the chicken and serve garnished with chopped parsley and lemon wedges on the side for squeezing over the top.
