Ingredients

4 bone-in chicken thighs, skinless

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons fresh lemon juice

4 cloves garlic, minced

2 tablespoons ginger, grated

2 tablespoons tandoori masala (store-bought or homemade)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon cayenne pepper (adjust for spice preference)

Salt to taste

Fresh cilantro, for garnish

Lemon wedges, for serving

Instructions

Marinate the Chicken: In a large mixing bowl, combine the yogurt, vegetable oil, lemon juice, minced garlic, grated ginger, tandoori masala, ground cumin, ground coriander, paprika, turmeric, cayenne pepper, and salt. Mix well until all ingredients are blended into a smooth marinade.

    Prepare the Chicken: Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for optimal flavor.

      Preheat the Grill: About 30 minutes before grilling, preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals for direct cooking.

        Grill the Chicken: Remove the chicken from the marinade, letting any excess marinade drip off. Place the chicken thighs on the grill, skin side down (if using legs), and close the lid. Grill for about 6-8 minutes on each side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).

          Rest: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes to allow the juices to redistribute.

            Serve: Garnish the grilled tandoori chicken with fresh cilantro and serve with lemon wedges on the side. Pair with naan, rice, or a salad for a complete meal.
