Ingredients

1 lb ground turkey

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons teriyaki sauce

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds, for garnish

Cooked rice or noodles, for serving

Instructions

Prepare the Sauce: In a small bowl, mix together the soy sauce, teriyaki sauce, honey, and sesame oil. Set aside.

    Cook the Turkey: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and cooked through. Drain any excess fat and remove turkey from the skillet; set aside.

      Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

        Add the Veggies: Toss in the red bell pepper, broccoli, carrot, and snap peas. Stir-fry for about 5-7 minutes or until the veggies are tender-crisp.

          Combine Everything: Return the cooked ground turkey to the skillet with the vegetables. Pour in the sauce, and stir well to combine.

            Thicken the Sauce: Add the cornstarch mixture to the skillet and stir constantly until the sauce thickens, about 1-2 minutes.

              Finish and Serve: Remove from heat and stir in the chopped green onions. Serve the stir fry over cooked rice or noodles, garnished with sesame seeds.
