Ingredients

2 cups diced ham

4 large potatoes, peeled and cubed

1 medium onion, finely chopped

3 cloves garlic, minced

3 cups chicken broth

1 cup milk or heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

½ cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.

    Cook the Ham: Stir in the diced ham and cook for an additional 3-4 minutes to slightly caramelize the ham.

      Add Potatoes & Broth: Add the cubed potatoes to the pot. Pour in the chicken broth and bring the mixture to a boil.

        Season: Once boiling, add the dried thyme, dried rosemary, salt, and pepper. Reduce the heat to a simmer and let it cook for about 15-20 minutes, or until the potatoes are tender.

          Make it Creamy: Using a potato masher or an immersion blender, mash some of the potatoes in the soup to thicken the texture while keeping some chunks for added heartiness. Stir in the milk or heavy cream and heat through.

            Add Cheese (Optional): If desired, add the shredded cheddar cheese and stir until melted and combined.
