Ingredients

4 large eggs

2 cups fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 cup milk (dairy or non-dairy)

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

Fresh herbs for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Spinach: In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, salt, black pepper, and paprika until well combined.

        Combine Ingredients: Stir in the sautéed spinach and cherry tomatoes into the egg mixture. Gently fold in the crumbled feta cheese.

          Bake: Pour the mixture into a greased baking dish (approximately 8x8-inch). Bake in the preheated oven for 20-25 minutes or until the eggs are set and the top is slightly golden.

            Hard-Boil Extra Eggs (Optional): While the bake is cooking, you can hard-boil additional eggs if desired. Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, turn off the heat and cover the pot; let sit for 9-12 minutes. Transfer to an ice bath, peel, and slice when cool.

              Serve: Once the bake is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh herbs if desired, slice, and serve warm alongside additional hard-boiled eggs for extra protein.
