Ingredients

3 large russet potatoes, peeled and grated

1 medium onion, diced

1 bell pepper (any color), diced

1 cup cooked breakfast sausage or bacon, crumbled

4 large eggs

1 cup shredded cheddar cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Instructions

Prepare the Potatoes: After grating the potatoes, place them in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for achieving crispy hash browns.

    Cook the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened.

      Crisp the Hash Browns: Increase the heat to medium-high and add the grated potatoes to the skillet. Season with salt and pepper. Press the potatoes down into an even layer and cook without stirring for about 5-7 minutes until golden brown and crispy. Then flip to cook the other side, adding more oil if necessary.

        Add Meats: Once both sides of the hash browns are crispy, scatter the crumbled sausage or bacon over the top, and reduce heat to low.

          Cook the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Make small wells in the hash browns and pour the beaten eggs into each well. Cover the skillet and cook for an additional 5-7 minutes, or until the eggs are set to your liking.

            Cheese it Up: When the eggs are almost set, sprinkle the shredded cheddar cheese evenly over the entire skillet. Cover again briefly to allow the cheese to melt.
