Ingredients

For the Crust:

1 ½ cups crushed graham crackers

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

¼ cup sugar

For the Filling:

1 can (20 oz) crushed pineapple, drained

1 cup sweetened condensed milk

8 oz cream cheese, softened

1 tsp vanilla extract

1 cup whipped cream or Cool Whip

½ cup chopped macadamia nuts (optional)

For the Topping:

1 cup whipped cream or Cool Whip

Fresh pineapple slices, for garnish

Shredded coconut, for garnish

Chopped macadamia nuts, for garnish

Instructions

Prepare the Crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine crushed graham crackers, shredded coconut, melted butter, and sugar. Mix until combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust. Bake for 8-10 minutes or until lightly golden. Remove from oven and let it cool completely.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the sweetened condensed milk, vanilla extract, and mix until well combined and creamy. Fold in the drained crushed pineapple and half of the whipped cream gently. If using, add the chopped macadamia nuts to the mixture.

      Assemble the Pie: Pour the filling into the cooled crust and spread it evenly. Refrigerate for at least 2 hours to set the filling.

        Add the Topping: Once the pie is set, gently spread the remaining whipped cream over the top of the filling. Garnish with pineapple slices, shredded coconut, and chopped macadamia nuts as desired.

          Serve: Slice the pie and serve chilled. Enjoy your tropical taste of the islands!
