Ingredients

1 cup plain Greek yogurt

1 cup self-rising flour (or 1 cup all-purpose flour + 1 ½ tsp baking powder + ½ tsp salt)

2 tablespoons honey or maple syrup

2 teaspoons cinnamon

2 tablespoons melted coconut oil or unsalted butter

¼ cup brown sugar or coconut sugar

1 teaspoon vanilla extract

Pinch of salt

Optional: glaze with powdered sugar and a splash of milk for drizzle

Instructions

Prepare the Dough: In a mixing bowl, combine the Greek yogurt and self-rising flour. Stir until a dough starts to form. Add honey or maple syrup and mix again until it comes together. If the dough is too sticky, you may add a little more flour.

    Roll Out the Dough: Lightly flour a clean surface and roll out the dough into a rectangle, about ¼ inch thick.

      Add Cinnamon Filling: Brush the melted coconut oil or butter over the rolled-out dough. In a small bowl, mix the brown sugar and cinnamon together. Sprinkle the mixture evenly over the dough, ensuring a nice layer.

        Roll and Cut: Starting from one end, tightly roll the dough into a log. Pinch the seam to seal it. Cut into approximately 1-inch slices to create individual rolls.

          Preheat Air Fryer: Preheat your air fryer to 325°F (160°C) for about 5 minutes.

            Arrange Rolls in Air Fryer: Place the cinnamon rolls in the air fryer basket, making sure they have space to rise and expand. Depending on the size of your air fryer, you may need to do this in batches.

              Air Fry the Rolls: Cook the cinnamon rolls in the air fryer for about 8-10 minutes, or until they are golden brown and cooked through.

                Prepare the Glaze (optional): While the rolls are cooking, whisk together powdered sugar and a splash of milk until you achieve a drizzle-like consistency.

                  Drizzle & Serve: Once the cinnamon rolls are out of the air fryer, allow them to cool for a minute. Drizzle the glaze over the warm rolls and serve them fresh!
