Ingredients

2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans)

1 cup seeds (pumpkin seeds, sunflower seeds)

1/2 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup dried fruit (raisins, cranberries, or apricots)

Instructions

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    In a large bowl, combine the rolled oats, mixed nuts, seeds, shredded coconut, cinnamon, and salt. Mix well.

      In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.

        Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

          Spread the granola mixture onto the prepared baking sheet in an even layer.

            Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown. Keep a close eye to avoid burning.

              Remove from the oven and let it cool completely on the baking sheet; it will become crunchy as it cools.

                Once cooled, mix in the dried fruit.

                  Store in an airtight container at room temperature for up to two weeks.
