Ingredients

2 medium zucchinis

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

8 oz whole wheat spaghetti or chickpea pasta

Instructions

Begin by spiralizing the zucchinis into noodles using a spiralizer or a vegetable peeler. Set aside.

    In a large pot, bring water to a boil and cook the whole wheat spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

      In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

        Add the halved cherry tomatoes and season with dried Italian herbs, red pepper flakes (if using), salt, and pepper. Cook for 5-7 minutes until the tomatoes begin to soften and release their juices.

          Add the spiralized zucchini noodles to the skillet and toss to combine. Cook for an additional 2-3 minutes until the zucchini is slightly tender but still firm.

            Mix in the cooked pasta and reserved pasta water as needed to create a light sauce that coats the pasta.

              Remove from heat and stir in fresh basil. Top with grated Parmesan cheese if desired.

                Serve immediately and enjoy your healthy and delicious Tomato Zucchini Pasta!
