Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh rosemary finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt to taste
  • freshly ground black pepper to taste
  • 1 piece lemon zested and juiced
  • Fresh rosemary sprigs for garnish

Instructions

  • In a medium mixing bowl, combine Dijon mustard, minced garlic, olive oil, apple cider vinegar, honey, lemon zest, and lemon juice. Whisk until blended.
  • Season the mixture with salt and pepper to taste.
  • Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over them, ensuring they are coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
  • Preheat grill or grill pan over medium heat, or preheat oven to 375°F (190°C) for baking.
  • Remove chicken from marinade and discard leftover marinade.
  • For grilling, cook chicken for 6-7 minutes on each side until internal temperature reaches 165°F (75°C). For baking, place in greased dish and bake for 25-30 minutes.
  • Let chicken rest for 5 minutes after cooking.
  • Garnish with fresh rosemary sprigs before serving.
