Ingredients

  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 2 medium carrots sliced into thin rounds
  • 2 stalks celery chopped
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 2 cups egg noodles
  • 2 tablespoons extra virgin olive oil
  • fresh parsley chopped, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, sliced carrots, and chopped celery; sauté for 5 minutes.
  • Stir in minced garlic and cook for 1 minute.
  • Add chicken breasts, chicken broth, water, thyme, salt, and pepper; bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked.
  • Remove chicken, shred it, and return to the pot.
  • Add egg noodles and cook for 7-10 minutes until tender.
  • Adjust seasoning if needed, then remove from heat.
  • Serve hot, garnished with chopped parsley.
