Ingredients

  • 1 pound boneless skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups fresh tortellini
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 2 medium carrots peeled and sliced
  • 2 stalks celery finely diced
  • 1 can diced tomatoes with juice
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste freshly ground black pepper
  • 2 cups fresh spinach roughly chopped
  • 2 tablespoons extra virgin olive oil
  • to taste grated Parmesan cheese
  • to taste fresh parsley chopped

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté the diced onion until translucent, about 3-4 minutes.
  • Add minced garlic, sliced carrots, and diced celery; cook for another 5 minutes.
  • Add chicken breasts and chicken broth; bring to a boil.
  • Reduce heat and simmer for 15-20 minutes until chicken is cooked.
  • Remove chicken, shred it, and return to the pot.
  • Stir in diced tomatoes, tortellini, basil, oregano, salt, and pepper; simmer for 8-10 minutes.
  • Add chopped spinach and cook until wilted, about 1 minute.
  • Serve hot, garnished with Parmesan cheese and parsley.
