Ingredients

  • 1 lb ground beef
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 4 medium potatoes peeled and cut into bite-sized pieces
  • 3 cups beef broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Chopped green onions for garnish optional
  • Croutons for serving optional

Instructions

  • In a medium skillet over medium heat, heat the olive oil and add the ground beef, cooking until browned.
  • Drain excess fat from the beef if necessary.
  • Add the diced onion and minced garlic to the skillet, sautéing for 3-4 minutes until the onion is soft.
  • Transfer the beef mixture to the crockpot and add potatoes, carrots, celery, beef broth, Worcestershire sauce, Dijon mustard, salt, and black pepper.
  • Stir to combine all ingredients well.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until vegetables are tender.
  • Stir in heavy cream and shredded cheddar cheese until melted and incorporated.
  • Taste and adjust seasoning as needed.
  • For a thicker soup, cook on high for an additional 15-30 minutes.
  • Serve hot, garnished with green onions and croutons.
