Ingredients

1 ½ lbs beef stew meat, cut into 1-inch cubes

4 cups beef broth

2 cups water

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, chopped

1 medium potato, diced

1 cup green beans, chopped

1 cup corn (fresh, frozen, or canned)

1 can (14.5 oz) diced tomatoes, undrained

1 tsp dried thyme

1 tsp dried oregano

1 bay leaf

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (optional for garnish)

Instructions

Sear the Beef: In a skillet over medium heat, warm the olive oil. Once hot, add the beef stew meat, allowing it to sear undisturbed for about 2-3 minutes on each side until all sides are browned, approximately 5-7 minutes total. This step intensifies the flavor of the meat, enhancing the overall taste of your soup.

    Prepare the Crockpot: Carefully transfer the seared beef to your crockpot using a slotted spoon to leave behind any excess fat.

      Add Vegetables: In the crockpot, combine the diced onion, minced garlic, sliced carrots, chopped celery, diced potato, green beans, corn, and undrained diced tomatoes, layering each ingredient on top of the beef.
