1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) chickpeas, rinsed and drained

1 cup vegetable broth

1 medium onion, finely diced

2 medium carrots, peeled and chopped

2 celery stalks, chopped

1 bell pepper (any color), chopped

3 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon chili powder (adjust based on desired heat)

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

Start by preparing your vegetables: finely dice the onion, chop the peeled carrots, chop the celery, and bell pepper, and mince the garlic cloves.

    In your crockpot, combine the diced tomatoes and vegetable broth as a base. Then, add the kidney beans, black beans, and chickpeas, gently stirring to ensure everything is mixed well.
