  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • 6 cups chicken or vegetable broth
  • 1 14.5- ounce can diced tomatoes undrained
  • 1 cup ditalini pasta
  • 1 15- ounce can cannellini beans rinsed and drained
  • 2 cups fresh spinach or kale chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley chopped, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat and add Italian sausage, breaking it up as it cooks for 5-7 minutes until browned.
  • Add diced onion, minced garlic, diced carrots, and diced celery; sauté for 5-7 minutes until vegetables are softened.
  • Sprinkle in dried oregano, dried basil, and red pepper flakes; stir and cook for another minute.
  • Pour in chicken or vegetable broth and canned diced tomatoes with juices; bring to a boil.
  • Add ditalini pasta and cook according to package instructions, about 8-10 minutes, stirring occasionally.
  • When pasta is nearly al dente, stir in rinsed cannellini beans and chopped spinach or kale; cook for 2-3 minutes until greens are wilted.
  • Season with salt and pepper to taste, then remove from heat and let rest for a few minutes.
