Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 28 ounce can of crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta such as fusilli or rotini
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes optional

  • 2 cups fresh spinach or kale roughly chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

  • In a large pot, heat olive oil over medium heat and brown the ground beef or sausage for 5-7 minutes.
  • Add the chopped onion and sauté until translucent, about 3-4 minutes, then stir in the garlic for 1 minute.
  • Pour in the crushed tomatoes and broth, then add oregano, basil, red pepper flakes, salt, and pepper. Bring to a boil.
