Ingredients

  • 1 pound Italian sausage casings removed
  • 4 medium-sized potatoes peeled and diced
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh kale chopped

  • to taste freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon extra virgin olive oil

Instructions

  • Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes.
  • Add chopped onion and minced garlic, sauté for 3-4 minutes until soft and translucent.
  • Incorporate diced potatoes, stirring to coat with the sausage mixture, and cook for 5 minutes.
  • Pour in chicken broth, stir, and bring to a boil. Reduce heat and simmer, covered, for 15 minutes until potatoes are tender.
  • Stir in heavy cream, chopped kale, thyme, salt, and pepper. Simmer uncovered for 5 minutes.
  • Taste and adjust seasoning if needed. Remove from heat.
  • Serve hot, garnished with fresh chopped kale.
