Ingredients

  • 1 lb ground beef
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 red bell pepper finely diced
  • 1 green bell pepper finely diced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 1 can 6 oz tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste salt and freshly ground black pepper

  • as desired sliced jalapeños

Instructions

  • In a medium skillet, brown the ground beef until fully cooked, then drain excess fat and transfer to the slow cooker.
  • Add the diced onion, minced garlic, and both bell peppers to the slow cooker with the meat.
  • Stir in the kidney beans, black beans, crushed tomatoes, tomato paste, and broth until well mixed.
  • Sprinkle in the chili powder, cumin, smoked paprika, oregano, and season with salt and pepper.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooking is complete, taste and adjust seasoning if necessary.
