Ingredients

  • 1 pound boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup carrots thinly sliced
  • 1 cup celery chopped
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 leaf bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish, optional)

Instructions

  • Place the chicken breasts at the bottom of the slow cooker.
  • Pour in the chicken broth and add the carrots, celery, onion, garlic, thyme, parsley, bay leaf, salt, and pepper.
  • Stir gently to combine all ingredients.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  • Remove the chicken and shred it into bite-sized pieces.
  • Return the shredded chicken to the slow cooker and mix it into the broth.
  • Add the egg noodles and stir until evenly distributed.
  • Cover and cook on high for an additional 30 minutes until noodles are tender.
  • Remove the bay leaf before serving.
  • Ladle into bowls and garnish with fresh parsley if desired.
