Ingredients

  • 1 pound spicy Italian sausage casings removed
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh kale chopped
  • 1 can diced tomatoes with juices
  • 1 teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon extra virgin olive oil
  • 1 cup potatoes peeled and diced into small cubes

Instructions

  • Heat the olive oil in a large pot over medium heat until shimmering.
  • Add the spicy Italian sausage and cook until browned, about 5-7 minutes.
  • Incorporate the onion and garlic, sauté until the onion is translucent, about 3-4 minutes.
