Ingredients

  • 2 lbs ground venison
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 string green bell pepper finely diced
  • 1 string red bell pepper finely diced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper optional
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish
  • Sour cream and shredded cheese for serving (optional)

Instructions

  • Finely dice the onion, garlic, and bell peppers. Rinse and drain the kidney and black beans.
  • Heat olive oil in a large pot over medium-high heat. Add ground venison and cook until browned, about 5-7 minutes.
  • Add diced onion, minced garlic, and bell peppers to the pot. Sauté for about 5 minutes until tender.
  • Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes.
  • Pour in crushed tomatoes, tomato paste, beef broth, kidney beans, and black beans. Mix well.
  • Bring to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes, stirring occasionally.
  • Taste and adjust seasoning. For a thicker chili, simmer uncovered for an additional 15-20 minutes.
  • Ladle into bowls and garnish with cilantro or parsley. Serve with sour cream and shredded cheese if desired.
