Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

  • 1 piece fresh lemon juiced
  • 1 cup couscous
  • 1 ¼ cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 cup Greek yogurt
  • 1 piece cucumber grated
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh dill chopped
  • ½ piece fresh lemon juiced
  • to taste salt
  • to taste freshly ground black pepper
  • to taste fresh parsley chopped
  • to taste cherry tomatoes halved
  • to taste crumbled feta cheese optional

Instructions

  • Marinate the chicken by whisking olive oil, minced garlic, oregano, thyme, paprika, salt, pepper, and lemon juice in a bowl. Coat the chicken and refrigerate for 30 minutes to 2 hours.
  • Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper in a bowl. Refrigerate for at least 30 minutes.
  • Cook the couscous by boiling broth in a saucepan, adding salt and olive oil, then stirring in couscous. Remove from heat, cover, and let sit for 5 minutes before fluffing with a fork.
  • Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until fully cooked.
  • Let the chicken rest for a few minutes before slicing into strips.
  • Assemble the bowls with a base of couscous, topped with sliced chicken and a dollop of tzatziki.
  • Garnish with chopped parsley, halved cherry tomatoes, and crumbled feta cheese if desired.
