Ingredients

1 pound boneless, skinless chicken breast, diced

1 cup orzo pasta

2 cups low-sodium chicken broth

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup spinach, chopped

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions

Cook the Orzo: In a medium saucepan, bring the chicken broth to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken and season with salt, pepper, oregano, and smoked paprika. Cook for 6-8 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes, or until softened. Add the minced garlic and continue to cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Stir in the cooked orzo and spinach, mixing well to incorporate. Add the cooked chicken back to the skillet. Mix everything together until the spinach wilts and all ingredients are heated through.

          Serve: Remove from heat and stir in the grated Parmesan cheese. Taste and adjust seasoning as necessary. Serve immediately, garnished with fresh parsley on top.
