Ingredients

2 medium-sized sweet potatoes

1 lb ground turkey

1 cup black beans (canned, rinsed, and drained)

1 cup corn (fresh, frozen, or canned)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup diced tomatoes (fresh or canned)

½ cup diced red onion

1 bell pepper (any color), diced

2 cloves garlic, minced

¼ cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Greek yogurt or sour cream (for serving, optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

    Bake Sweet Potatoes: Wash the sweet potatoes and poke several holes in them with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender. You can check doneness by inserting a fork; it should go in easily.

      Cook Ground Turkey: While the sweet potatoes are baking, heat a non-stick skillet over medium heat. Add the ground turkey and cook until browned, approximately 5-7 minutes.

        Add Veggies: Once the turkey is cooked, add the diced red onion, bell pepper, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.

          Season the Mixture: Stir in the chili powder, cumin, smoked paprika, salt, pepper, black beans, corn, and diced tomatoes. Cook for an additional 5 minutes, allowing the flavors to meld together.

            Stuff the Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool for a minute. Carefully slice each sweet potato down the middle without cutting all the way through. Gently mash the insides with a fork to create space for the filling.

              Assemble: Fill each sweet potato with the turkey and veggie mixture, packing it generously.

                Serve: Top each stuffed sweet potato with fresh cilantro and avocado slices. If desired, add a dollop of Greek yogurt or sour cream on top for extra creaminess.
