Ingredients

  • 1 pound ground beef
  • 1 large onion finely diced
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes (with juices)
  • 1 can 15 oz kidney beans, drained and rinsed
  • 2 cups frozen mixed vegetables
  • 1 cup uncooked elbow macaroni
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning

  • 1 cup shredded sharp cheddar cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat over medium heat. Add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent.
  • Drain any excess fat from the skillet. Add diced tomatoes, kidney beans, mixed vegetables, macaroni, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir to combine.
  • Increase heat to bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes.
  • Grease a 9x13 inch baking dish and transfer the beef mixture into it, spreading it out evenly.
  • Sprinkle the shredded cheddar cheese over the top of the casserole.
  • Cover the dish tightly with aluminum foil and bake for 25 minutes.
  • Remove the foil and continue baking for an additional 10 minutes, until the cheese is melted and bubbly.
  • Let the casserole cool for 5-10 minutes before serving.
