Ingredients

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

1/4 cup red wine vinegar

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup extra-virgin olive oil

Juice of 1 lemon

Instructions

In a medium-sized bowl, combine the finely chopped parsley and cilantro.

Add the minced garlic, red pepper flakes, salt, and black pepper to the herb mixture. Mix well to combine.

Pour in the red wine vinegar and lemon juice. Stir to integrate the flavors together.

Slowly drizzle in the olive oil while whisking until the sauce is well-blended and emulsified.

Taste and adjust seasoning. You can add more salt or red pepper flakes according to your preference.

Transfer the chimichurri to a glass jar or airtight container. For the best flavor, let it sit for at least 30 minutes at room temperature before serving. This resting time enhances the flavors significantly.

Serve over grilled meats, roasted vegetables, or as a dipping sauce with bread. Store leftovers in the refrigerator for up to 1 week.
