Ingredients

1 cup all-purpose flour (plus extra for dusting)

1/2 cup whole wheat flour

1/2 teaspoon salt

1 teaspoon baking powder

1/4 cup olive oil

1/2 cup warm water

1 tablespoon dried herbs (such as rosemary, thyme, or oregano)

Coarse sea salt (for sprinkling)

Optional: sesame seeds or poppy seeds for topping

Instructions

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, and baking powder. Mix well to ensure all dry ingredients are evenly dispersed.

    Create a well in the center of the flour mixture and add the olive oil. Gradually pour in the warm water while mixing with a fork until a shaggy dough forms.

      Once combined, transfer the dough to a lightly floured surface. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

        Incorporate the dried herbs by kneading them into the dough until well distributed. Cover the dough with a damp cloth and let it rest for about 30 minutes.

          Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

            After resting, divide the dough into 4 equal portions. Roll out each portion as thinly as possible using a rolling pin, ensuring it remains floured on both sides to prevent sticking.

              Cut the rolled-out dough into desired shapes (squares, rectangles, or fun shapes) and place them on the prepared baking sheet.

                Sprinkle the tops with coarse sea salt and, if desired, additional seeds for extra flavor and crunch.

                  Bake in the preheated oven for 10-12 minutes, or until the crackers are golden brown and crisp. Keep an eye on them to prevent burning.

                    Once baked, remove the crackers from the oven and allow them to cool on a wire rack. They will crisp up even more as they cool.
