Ingredients

2 lbs chicken thighs (boneless, skinless)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

¾ cup buttermilk

¼ cup honey

½ cup unsalted butter (divided)

1 teaspoon cayenne pepper (optional, for heat)

Fresh parsley (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, honey, and a pinch of salt. Add the chicken thighs and let them marinate in the refrigerator for at least 1 hour (or overnight for best results).

Prepare the Coating: In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). In another bowl, whisk the eggs.

Coat the Chicken: Remove the marinated chicken from the buttermilk mixture, allowing any excess to drip off. Dip each piece into the egg mixture, then dredge it in the seasoned flour, ensuring an even coat. Shake off any excess flour.

Fry the Chicken: In a large skillet, heat ¼ cup of butter over medium-high heat. Once melted and bubbly, add the coated chicken thighs. Fry in batches until golden brown and cooked through, about 5-7 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Make the Honey Butter Sauce: In the same skillet, lower the heat and add the remaining ¼ cup of butter. Once melted, stir in the remaining honey and allow it to cook for 1-2 minutes until slightly thickened. Drizzle over the fried chicken pieces and toss gently to coat.

Serve: Place the honey butter chicken on a serving platter. Garnish with freshly chopped parsley for a pop of color. Serve warm with your favorite sides, such as mashed potatoes or a fresh green salad.
