Ingredients

  • 4 pieces boneless skinless chicken breasts
  • ¼ cup Dijon mustard
  • ¼ cup honey
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic finely minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt

  • 2 cups broccoli florets
  • 1 cup baby carrots halved
  • 1 cup cherry tomatoes halved
  • for garnish fresh parsley chopped

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a medium bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, dried thyme, smoked paprika, salt, and pepper until smooth.
  • Place chicken breasts in a large baking dish and pour the honey Dijon mixture over them, coating thoroughly.
  • Arrange broccoli, halved baby carrots, and halved cherry tomatoes around the chicken.
  • Drizzle olive oil over the vegetables and season with salt and pepper.
  • Bake in the preheated oven for 25-30 minutes until chicken reaches 165°F (75°C) and vegetables are tender.
  • Remove from oven and let rest for a few minutes.
  • Sprinkle with chopped parsley before serving.
  • Serve chicken with roasted vegetables and drizzle remaining sauce over the top.
