Ingredients

1 pound baby carrots, peeled and trimmed

3 tablespoons unsalted butter

3 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: In a large bowl, combine the peeled and trimmed baby carrots.

      Make the Honey Garlic Butter: In a small saucepan over medium heat, melt the butter. Stir in the honey, minced garlic, and fresh thyme. Allow the mixture to simmer for about 2-3 minutes, stirring occasionally, until fragrant.

        Coat the Carrots: Pour the honey garlic butter mixture over the carrots. Season with salt and pepper to taste, and toss until the carrots are evenly coated.

          Roast the Carrots: Spread the coated carrots in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even roasting.
