Ingredients

2 boneless, skinless chicken breasts

3 tablespoons honey

2 tablespoons lime juice

1 tablespoon soy sauce

1 garlic clove, minced

1 tablespoon olive oil

Salt and pepper, to taste

1 cup jasmine rice, rinsed

2 cups chicken broth (or water)

1 ripe avocado, diced

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 teaspoon chili powder

1 lime, cut into wedges (for garnish)

Instructions

Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, olive oil, and a pinch of salt and pepper. Add the chicken breasts, ensuring they are fully coated. Marinate for at least 30 minutes.

    Cook the Rice: In a medium pot, bring the chicken broth (or water) to a boil. Add the rinsed jasmine rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 15 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

      Prepare the Avocado Mixture: In a small bowl, combine the diced avocado, chopped red onion, cilantro, and chili powder. Season with a pinch of salt and lime juice. Stir gently to combine and set aside.

        Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Allow to rest for 5 minutes, then slice into strips.

          Assemble the Stack: On a plate, create layers starting with a scoop of jasmine rice, followed by a layer of the avocado mixture, and then top with slices of the grilled chicken. Repeat to create a second layer if desired.
