Ingredients

4 cups all-purpose flour

1/4 cup sugar

2 teaspoons active dry yeast

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

2 cups whole milk (warm)

1/4 cup unsalted butter (melted)

2 large eggs

1 cup mixed dried fruit (currants, raisins, and sultanas)

1/2 cup candied orange peel (chopped)

1 teaspoon vanilla extract

For the crosses:

1/2 cup all-purpose flour

Water as needed

For the glaze:

1/4 cup apricot jam

1 tablespoon water

Instructions

Prepare the Dough: In a mixing bowl, whisk together the flour, sugar, yeast, salt, cinnamon, and nutmeg.

    Combine Wet Ingredients: In another bowl, combine the warm milk, melted butter, eggs, and vanilla extract. Make sure it's not too hot to avoid killing the yeast.

      Mix: Gradually add the wet mixture to the dry ingredients and stir until combined.

        Knead the Dough: Lightly flour a clean surface and knead the dough for about 10 minutes or until it's smooth and elastic.

          Add Fruits: Fold in the mixed dried fruits and candied orange peel until evenly distributed.

            First Rising: Place the dough in a large greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours until it doubles in size.

              Shape the Buns: Punch down the risen dough and divide it into 12 equal portions. Shape each portion into a round bun and place them on a lined baking tray, ensuring there's space between each one.

                Second Rising: Cover with a cloth again and let them rise for another 30-45 minutes until puffed up.

                  Prepare the Cross Mix: In a small bowl, mix the flour for the crosses with enough water to make a thick paste. Use a piping bag or a ziplock with a corner cut off to pipe crosses onto each bun.

                    Bake: Preheat the oven to 375°F (190°C). Bake the buns for about 20-25 minutes or until golden brown.

                      Glaze: While the buns are baking, prepare the glaze by heating the apricot jam and water together in a small saucepan until warm.

                        Finish: Once baked, remove the buns from the oven and brush them with the warm glaze to give them a beautiful shine.

                          Cool and Serve: Let the buns cool slightly on a wire rack before serving warm.
