Ingredients

2 large yellow onions, finely chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 cup cream cheese, softened

½ cup sour cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

½ cup green onions, chopped (for garnish)

Tortilla chips or sliced baguette (for serving)

Instructions

Sauté the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onions, salt, pepper, and thyme. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes. Add the minced garlic in the last 2 minutes of cooking.

Combine Ingredients: In a large mixing bowl, combine the softened cream cheese, sour cream, mozzarella cheese, and half of the grated Parmesan. Mix until smooth and well combined.

Add the Onions: Fold the caramelized onion and garlic mixture into the cheese mixture until evenly distributed.

Bake the Dip: Preheat your oven to 375°F (190°C). Transfer the dip mixture into a baking dish and sprinkle the remaining Parmesan cheese on top. Bake for 20-25 minutes, or until the dip is bubbly and golden on top.

Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped green onions and serve warm with tortilla chips or sliced baguette for dipping.
