  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup heavy cream
  • cup unsweetened cocoa powder
  • 2 cups pitted cherries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • Chocolate shavings for garnish

Instructions

  • Preheat oven to 325°F (160°C). Mix crushed cookies, melted butter, and sugar; press into a 9-inch springform pan and bake for 10 minutes.
  • Beat cream cheese until smooth, then add sugar and vanilla. Mix in eggs one at a time, then fold in sour cream, heavy cream, and cocoa powder.
  • Pour filling over cooled crust and bake for 55-60 minutes until edges are set.
  • Cool cheesecake in the oven for 1 hour with the door cracked.
  • In a saucepan, combine cherries, sugar, cornstarch, vanilla, and lemon juice; cook until thickened.
  • Refrigerate cheesecake for at least 4 hours or overnight.
