Ingredients

1 cup Arborio rice (or any short-grain rice)

4 cups whole milk

1 cup coconut milk (for a tropical twist)

½ cup sugar (or to taste)

1 teaspoon vanilla extract

½ teaspoon ground cinnamon (plus extra for serving)

¼ teaspoon salt

2 large eggs (optional, for creaminess)

½ cup raisins (or your choice of dried fruit)

Fresh fruit or toasted nuts (for topping, optional)

Instructions

Rinse the Rice: Begin by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch and will help prevent the pudding from becoming too gummy.

    Combine Ingredients in Instant Pot: In the Instant Pot, combine the rinsed rice, whole milk, coconut milk, sugar, vanilla extract, ground cinnamon, and salt. Stir well to combine.

      Cook on Manual Mode: Seal the Instant Pot lid and set it to manual mode on high pressure for 10 minutes. Make sure the pressure valve is set to the sealing position.

        Natural Release: Once the cooking time is up, allow for a natural pressure release for about 10 minutes. Then, carefully quick-release any remaining pressure by turning the valve to the venting position.

          Optional Egg Mixture: In a mixing bowl, whisk together the eggs (if using) in a separate bowl. Once the Instant Pot lid is removed, take a cup of the hot rice mixture and slowly temper it into the egg mixture, stirring constantly. This prevents curdling. Then, stir the tempered mixture back into the pot.

            Add Raisins: Stir in the raisins and mix everything well. Select the sauté mode and gently cook the pudding for another 2-3 minutes, stirring frequently until it thickens to a creamy consistency.

              Cool and Serve: Turn off the Instant Pot and allow the pudding to cool slightly. The pudding will continue to thicken as it cools. Serve warm or chilled, topped with a sprinkle of cinnamon, fresh fruit, or toasted nuts if desired.

                Storage: Store any leftovers in an airtight container in the fridge for up to 3 days.
