2 cups apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup unsweetened applesauce

2 large eggs

1/4 cup vegetable oil

1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup melted butter (for coating)

Instructions

Reduce the Apple Cider: In a medium saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat to medium-low and simmer until it reduces to about 1/2 cup, stirring occasionally. This should take about 15-20 minutes. Remove from heat and let it cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray or use silicone molds.

      Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, combine the reduced apple cider, applesauce, eggs, vegetable oil, and vanilla extract. Whisk until smooth.

          Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

            Fill the Donut Pan: Carefully spoon or pipe the batter into each donut mold, filling each about 2/3 full.
