Ingredients

1 cup apple cider

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon ground ginger

1/2 cup granulated sugar (for coating)

1 tablespoon cinnamon (for coating)

Instructions

Preheat your oven to 375°F (190°C). Grease a donut pan with non-stick spray or softened butter.

    In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and simmer until it’s reduced to about 1/2 cup (approximately 10-15 minutes). Let it cool slightly.

      In a large mixing bowl, whisk together the granulated sugar, brown sugar, and melted butter until combined.

        Add the egg, vanilla extract, and the reduced apple cider to the bowl, whisking until smooth.

          In another bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, salt, and ginger.

            Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing until just combined. Be careful not to overmix.

              Spoon the batter into the prepared donut pan, filling each cavity about halfway full.

                Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.

                  Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                    In a small bowl, mix the granulated sugar with cinnamon for the coating. While the donuts are still warm, roll them in the cinnamon-sugar mixture until evenly coated.
