  • 1 lb ground beef or ground turkey
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 1 each bell pepper diced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and freshly ground black pepper
  • 1 cup beef or vegetable broth
  • to taste optional toppings: shredded cheese sour cream, freshly chopped cilantro, sliced jalapeños

Instructions

  • In a large pot or Dutch oven, heat over medium heat and add the ground beef or turkey, breaking it apart with a wooden spoon until browned, about 5-7 minutes.
  • Drain any excess fat if necessary, then add the diced onion, bell pepper, and minced garlic. Sauté until softened, about 5 minutes.
  • Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir well and cook for an additional minute.
  • Pour in the crushed tomatoes and broth, stirring to combine all ingredients.
  • Gently fold in the kidney beans and bring the chili to a gentle simmer.
  • Reduce heat to low and let it simmer uncovered for 30-45 minutes, stirring occasionally.
