Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon ground cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

1 cup unsweetened applesauce

1/2 cup vegetable oil

1 teaspoon vanilla extract

2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup chopped walnuts or pecans (optional)

1/2 cup brown sugar (for topping)

Instructions

Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners or grease it with cooking spray.

    In a large mixing bowl, combine the flour, granulated sugar, ground cinnamon, baking powder, baking soda, and salt. Whisk until well blended.

      In another bowl, whisk together the eggs, applesauce, vegetable oil, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients. Gently mix with a spatula until just combined; do not overmix.

          Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

            Fill each muffin cup about 2/3 full with the batter.

              In a small bowl, mix the brown sugar with a sprinkle of cinnamon. Sprinkle this mixture generously on top of each muffin.

                Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
