Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta such as orzo or ditalini
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 cup fresh kale or spinach chopped
  • ¼ cup fresh parsley finely chopped
  • Salt and freshly ground black pepper to taste
  • Freshly grated Parmesan cheese for serving
  • Lemon wedges for serving

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and sauté for about 5 minutes until translucent.
  • Stir in the garlic, carrots, and celery; sauté for another 5 minutes.
  • Add oregano, thyme, and red pepper flakes; cook for 1 minute.
  • Pour in the broth and bring to a boil; add the pasta and cook until al dente.
  • Fold in the beans and greens; simmer for 5 minutes until wilted.
  • Season with salt and pepper; stir in parsley before serving.
  • Serve hot, garnished with Parmesan and lemon juice.
