Ingredients

2 slices of sourdough bread

2 tablespoons unsalted butter, softened

4 slices of sharp cheddar cheese

2 ounces of thinly sliced smoked ham

2 fresh jalapeños, sliced (seeds removed for less heat)

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

Prepare the Spread: In a small bowl, mix together the mayonnaise and Dijon mustard. Set aside.

    Assemble the Sandwich: Spread one side of each slice of sourdough bread with the softened butter. On the other side of one slice, spread a thin layer of the mayo-mustard mixture.

      Layer the Cheese and Ham: Begin layering with 2 slices of cheddar cheese on the mayo-mustard side. Add a layer of smoked ham, followed by slices of fresh jalapeños. Top with the remaining 2 slices of cheddar cheese.

        Close the Sandwich: Place the second slice of bread on top, buttered side up.

          Grill the Sandwich: Heat a frying pan or griddle over medium heat. Once hot, carefully place the sandwich on the pan. Cook for about 3-4 minutes or until the bread is golden brown and the cheese begins to melt.

            Flip and Cook: Gently flip the sandwich using a spatula. Cook for another 3-4 minutes on the other side until golden brown and the cheese is fully melted.

              Serve: Remove from the pan and let it sit for about 1 minute before slicing it in half. Serve hot, optionally with a side of pickles or chips.
