20 large cremini or button mushrooms

4 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (about 4 slices)

2 fresh jalapeños, seeds removed and finely chopped

1/4 cup green onion, finely chopped

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs

Olive oil for drizzling

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Clean the mushrooms with a damp paper towel. Carefully remove the stems and set aside; you will chop them for the filling.

      Make the Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon, chopped jalapeños, chopped green onions, garlic powder, smoked paprika, and chopped mushroom stems. Season with salt and pepper to taste. Mix until well combined.

        Stuff the Mushrooms: Using a small spoon or your fingers, fill each mushroom cap generously with the jalapeño popper mixture. Press down slightly to ensure they are packed well.

          Add Breadcrumbs: Place the stuffed mushrooms onto a baking sheet lined with parchment paper. Sprinkle the tops with breadcrumbs, then drizzle lightly with olive oil to help them brown during baking.
